Know-how

For over 240 years, the firm’s wines and brandies have maintained an open and proudly cosmopolitan spirit without losing sight of the traditional roots of their origins. Sanchez Romate employ painstakingly efficient wine-making techniques, which start with the white albariza soil, western’s sunshine and air, the Palomino, Airen and Pedro Ximenez grape varieties and a unique microclimate.

Nebulis BRANDY DE JEREZ Cardenal Mendoza Nebulis Nebulis acquires its unique character by aging Cardenal Mendoza Clásico (15yrs old) for a second time in 250 litre Spanish oak barrels which have undergone an intense toasting with vine shoots from our own vineyards in Jerez. The nose develops slowly and the initial soft smoky notes become more intense the longer the bouquet is savored. On the palate, the brandy has a perfect balance of spicy notes of fresh tobacco and the elegant smokiness of the vine shoot, inviting you to repeat the experience. SHERRY VINTAGES FINO PERDIDO Bright golden yellow, transparent wine. Delicate and sharp aroma, with notes of yeast, fresh bread dough and almonds that come from its lengthy ageing process under the flor yeasts following the traditional solera system where the barrels are arranged into different tiers or criaderas.
