For over 240 years, the firm’s wines and brandies have maintained an open and proudly cosmopolitan spirit without losing sight of the traditional roots of their origins. Sanchez Romate employ painstakingly efficient wine-making techniques, which start with the white albariza soil, western’s sunshine and air, the Palomino, Airen and Pedro Ximenez grape varieties and a unique microclimate.

Located in the northwest of the province of Cádiz, the southernmost of the Iberian Peninsula.

The climate is Mediterranean with the influence of the Atlantic Ocean. It has an average temperature of 17.5°C.
soil
The albariza soil is the ideal soil for the production of grapes suitable for the production of Jerez.

The three grape varieties of Marco de Jerez are Palomino, Pedro Ximénez and Moscatel.

They inspire sensory characteristics whose variations and nuances rarely coincide in other parts of the wine world.
ELABORATION
They generally age by means of a very special method: Criaderas and solera.
BRANDY DE JEREZ
Cardenal Mendoza Nebulis
Nebulis acquires its unique character by aging Cardenal Mendoza Clásico (15yrs old) for a second time in 250 litre Spanish oak barrels which have undergone an intense toasting with vine shoots from our own vineyards in Jerez. The nose develops slowly and the initial soft smoky notes become more intense the longer the bouquet is savored. On the palate, the brandy has a perfect balance of spicy notes of fresh tobacco and the elegant smokiness of the vine shoot, inviting you to repeat the experience.
AMONTILLADO, RESERVAS ESPECIALES
Amontillado NPU
A bright amber coloured wine. A sharp nutty aroma with hints of herbs, tobacco and lightly toasted oak. A very dry and smooth taste with a balanced acidity and a long hazelnut aftertaste. A very special wine produced from a biological aging process under the yeast membrane, followed by a oxidative aging process. Perfect with soups and consommés, white meats, oily fish (tuna), mush-rooms and semi-cured cheeses. It perfectly brings different vegetables together, like asparagus and artichokes. Served between 13 and 14ºC.
BRANDY DE JEREZ
Cardenal Mendoza Clásico
Luminous, transparent, dark mahogany. Round, clean, elegant, vinous aroma. Balanced and persistent on the palate, without edges. Personality, harmony of nuances and the deep memory of raisins and plums.

Bright golden yellow, transparent wine. Delicate and sharp aroma, with notes of yeast, fresh bread dough and almonds that come from its lengthy ageing process under the flor yeasts following the traditional solera system where the barrels are arranged into different tiers or criaderas. Very dry and slightly bitter on the palate, with a persisting almond and nutty flavour.
