Each fino cask ages differently depending on the yeast strain, humidity, temperature and air currents in the cellar. We select the finest casks and have them bottled as Fino Perdido.
Bright golden yellow, transparent wine.
Delicate and sharp aroma, with notes of yeast, fresh bread dough and almonds that come from its lengthy ageing process under the flor yeasts following the traditional solera system where the barrels are arranged into different tiers or criaderas.
Very dry and slightly bitter on the palate, with a persisting almond and nutty flavour.
Appetizers, old cheeses, iberian ham, nuts, shellfish and fish
Use an ice bucket with both ice and water to serve chilled between 6º & 8º C. In traditional wide-rimmed catavinos, or in white wine glasses.
